Application: this mixture of ingredients has been developed for the production of spoon sauces and dressings of cold process; It is an optimal combination of stabilizers for a light mayonnaise with excellent gloss, texture and stability, taking advantage of the benefits of modified starches to replace the oil in this type of emulsions.
